Recipe: Dark Chocolate Avocado Cookies
Gluten & Dairy-Free Recipe For Dark Chocolate Avocado Cookies
Ten years ago, if you had asked for something gluten-free, most people would have looked at you sideways. Today, sensitivity to dietary restrictions is at an all-time high. This is great news, until you want to bring in a batch of desserts to your office or to a potluck. What do you make that everyone will be able to enjoy?
If you are looking for a sweet treat everyone can eat, whip up this recipe for a batch of decadent dark chocolate avocado cookies.
- ½ cup of avocado, mashed
- ½ cup of turbinado sugar
- 2 teaspoons of vanilla extract
- 1 teaspoon of cinnamon
- 1 teaspoon of cider vinegar
- 2 tablespoons of unsweetened cocoa powder
- ½ teaspoon of baking soda
- ¾ cup of gluten-free flour mix
- 1 100-gram bag of dark chocolate chips
Preheat your oven to 350, then line a baking sheet with parchment paper.
In your food processor, combine the avocado and sugar until smooth. Add in the vanilla extract, cinnamon, cider vinegar, cocoa powder, and baking soda and mix until everything is evenly combined.
Slowly add the flour, mixing until smooth. Pour the batter into a large mixing bowl and stir in the chocolate chips.
Drop the dough onto a baking sheet and flatten to your desired cookie shape (the dough will not spread as it bakes). Bake for 5 minutes, turn your baking sheet, then back for 5 more. Let sit for 5 minutes, then transfer to a cooling rack. Enjoy!
