Memorial Day Recipes: Potato Salad
What you will need:
- 6 Pounds of Medium Red Potatoes
- 1 Cup of Water
- ½ Cup of Butter, Cubed
- ¼ Cup of White Vinegar
- 2 Eggs
- ½ Cup of Sugar
- 4 ½ Teaspoons of Cornstarch
- ¾ Cup of Heavy Whipping Cream
- ¾ Cup of Miracle Whip
- 1 Small Onion, Finely Chopped
- 2 Green Onions, Sliced
- 1 Teaspoon of Salt
- ½ Teaspoon of Pepper
- 3 Hard-Cooked Eggs, Sliced
- Paprika
How to prepare:
- Start by placing the red potatoes in a stockpot and add water until covered. Bring the water to a boil and then reduce the heat and cook for an additional 15 to 20 minutes until the potatoes are tender. Then, drain. Once cooled, you can peel and slice the potatoes.
- For the dressing, heat the water, butter, and vinegar in the top portion of a double boiler until the butter has completely melted.
- Separately in a small bowl, beat the sugar, cornstarch, and eggs together and then add the butter. Cook for about five to seven minutes, stirring throughout. Once the mixture has thickened, you can transfer to a larger bowl while waiting for it to cool completely.
- In a small bowl, beat the cream until you see stiff peaks forming. Stir the Miracle Whip into the cooled dressing concoction and fold in the whipped cream.
- Stir in the green onions, onion, salt, and pepper, and add the potatoes, tossing to combine. Refrigerate until completely chilled.
- To serve, add the paprika and hard-cooked eggs and enjoy!
