Apple-Cranberry Crisp
Ingredients:
- 2 lbs. of Granny Smith Apples, peeled, cored, and thinly sliced
- ¾ cup of cranberries
- ¼ cup of white sugar
- 3 tsp. of ground cinnamon
- I tsp. of ground nutmeg
- 1/3 cup of quick cooking oats
- 1/3 cup of all-purpose flour
- ½ cup of light brown sugar, packed
- ¼ cup butter, cut into pieces
- ½ cup of chopped pecans
Directions:
- Preheat oven to 375°F and butter an 8 inch square baking dish.
- Mix together the sliced apples, cranberries, white sugar, cinnamon, and nutmeg in a large bowl. Spread evenly in the baking dish.
- Combine the oats, flour, and brown sugar and mix in the butter until it is crumbly. Stir in the pecans and then spread this mixture over the apples.
- Bake in the oven for 40 to 50 minutes, or until the oat topping is golden brown and the apples are tender. Enjoy!
Candy Cane Fudge
Ingredients:
- 2 (10 ounce) packages of vanilla baking chips
- 1 (14 ounce) can of sweetened condensed milk
- ½ tsp. of peppermint extract
- 1 ½ cups of crushed candy canes
- 1 dash or red or green food coloring
Directions:
- Line an 8-inch square baking pan with foil and grease it.
- Combine the vanilla chips and sweetened condensed milk in a medium saucepan. Stir on medium heat until it is almost melted and remove from heat and stir until smooth.
- Once completely melted, stir in the peppermint extract, food coloring, and candy cane pieces.
- Spread evenly into the pan, chill for two hours, serve, and enjoy!
